During the holidays, my imagination goes into hyper mode, are our spirits are lifted and escapades become thematic. From the recipes to make, polar express trains to catch, and seasonal markets to explore, my head and heart are bursting with holiday cheer and excitement. Despite having annual traditions such as singing around the piano, decorating the tree, and taking our holiday card photo, we manage to incorporate new experiences each year as well. Whether it is a new baby or a child that can now understand who Santa is, we welcome the yearly changes or additions to our holiday traditions but also enjoy looking back at how everyone has grown. This holiday season will be extra special since welcoming another baby boy to the family making the 2018 holidays our first as a family of 5.
This year, our favorite recipe is “Oreo Cake Pops”. It is incredibly easy, super delicious, and of course, so much fun to make.
Holiday Oreo Cake Pops
8oz of Cream Cheese
8oz melted chocolate
Place the Oreos in a food processor until made into crumbs
In a mixing bowl add the Oreo crumbs and cream cheese and mix together.
Chill the batter for 15 minutes.
Roll the Oreo batter into balls, about 2 tbsp of batter for each.
Place Oreo balls gently onto lollipop sticks about 3/4 of the way through.
Place pops in the freezer for 20 minutes.
Melt the chocolate in a microwave safe bowl 30 seconds at a time until fully melted.
Gently dip the Oreo pops in the melted chocolate and decorate with sprinkles. Place the pops standing upright in styrofoam, or simply place tin foil over a lasagna dish and pop them through.
