Magical Lactation Cookie Balls
As a working lactating momma, sometimes I have a meeting that cuts into my pump time messing up my whole schedule. I also have days where I just forget to drink enough water, or fall asleep at 8pm skipping my last pump of the day... all of these things causing my supply to drop. When that happens I prescribe myself a few of these amazingly delicious cookie balls. I made the recipe up wanting something yummy that improved my milk supply but was also L O W C A R B, L O W S U G A R, H I G H P R O T E I N and full of F I B E R. I have a sweet tooth so a little dark chocolate curbs my cravings.
*You don't have to be lactating to eat these, the whole family can enjoy!
Ingredients:
2 eggs
1/4 cup dark chocolate chips
1/4 cup oat bran
1/4 cup flaxseed
1/4 cup chia seeds
1/4 peanut butter powder (or vanilla protein powder)
3 cups organic oats
1 tablespoon of stevia
2 tablespoons of dried fennel seeds (optional)
2 bananas

Directions:
Preheat the oven to 350 degrees
Mix all of the dry ingredients in a bowl
In a separate bowl mash the bananas then add the 2 eggs and mix.
Combine all ingredients into a large bowl, mix with a wooden spoon until blended.
Form the batter into 1.5 inch balls and place onto a cookie sheet lined with parchement paper.
Bake the cookie balls for 10 minutes in the oven, serve room temp!
Makes 24 cookie balls

I store them in the fridge all week long and microwave them for 15 seconds before I eat them. They are such a guilt free treat!!!
