Blood Orange Glazed Salmon
There's a snow storm coming! So, what's the most important thing to prepare for? At least 3 days worth of amazing recipes to try while watching that gorgeous white fluff fall out the windows.
My favorite winter citrus, blood oranges make for an amazing glaze on sockeye salmon. Recipe below.
Ingredients:
2lb fresh wild caught sockeye salmon
1/4 cup orange marmalade
1lb brussels sprouts
2 sprigs fresh rosemary
2 blood oranges
dash of salt
dash of pepper
1tbs of soy sauce

Directions:
1) Preheat oven to 300 degrees and line a cookie sheet with parchment paper
2) In a bowl add the marmalade, soy sauce, and blood orange juice of one orange. Mix until smooth. Then, spoon the mixture onto the salmon, use all of it!
3) Salt and pepper the salmon. Add the brussels sprouts to the pan. Slice the other blood orange into thin circles and add half on the salmon and the other half to the pan. Add the rosemary sprigs throughout.
4) Cover with aluminum foil and bake for 30-45 minutes until cooked through. Enjoy!
